So as many of you will know I am a huge fan of my slow cooker. I haven’t had mine for long but it has changed my life! Being a working mom the earliest I get home is 4:45pm. Some days I work til 7pm. I, like all other Mom’s out there, want my family to have a healthy meal every night. It gets tricky though, because I simply don’t always have the time.
Yesterday morning before I left for work I cut up some potatoes and onions. Flung them in the slow cooker. Took some pork chops, marinated them in Italian salad dressing (I know that sounds weird, but just go with it), put the chops on top of the potatoes and onions. Set the slow cooker to Auto. Came home from work at 6:30pm and had cooked meal waiting for me.
I put the cooked chops and potato/onion mix into a oven dish to grill for a few minutes, just to add some color and crispiness. Added peas and mielies on the side. But by 7pm my family was eating. That simple!
For those who would like the ‘Recipe’, here it is:
- 4 Pork Chops
- Enough Italian dressing to marinate chops
- about 6 potatoes, peeled and chopped into quarters
- 1 large onion chopped
- I also added some garlic, parsley, salt and pepper to the mix. But you could use whichever herbs and spices you like.
Tonight I am doing a Chicken, Butternut and Rosemary casserole. Will let you know how it turns out!
